Just 30 minutes from Dublin, AIMSIR is a highly-acclaimed, two-star Michelin restaurant on the 'Cliff at Lyons' estate – a luxury, boutique hotel.  The restaurant, which serves a signature 18-course tasting menu with a strong emphasis on Irish ingredients, is run by Jordan Bailey, former head chef at 3-star Michelin Maaemo in Oslo and his wife Majken who perfected her front of house skills at Henne Kirkeby Kro in Denmark – a 2-star Michelin restaurant.

For a more casual alternative to the set menu, guests can choose to enjoy The Lounge between 3pm and 6pm each day where they can snack on 'set plates of garden treats, house made breads or crackers and charcuterie with foraged pickles and preserves and excellent Irish Cheese.'

'Jordan Bailey & Majken Bech-Bailey

Just over four short months after opening, husband and wife Jordan and Majken Bech Bailey and their young, multi award-winning team at Aimsir were awarded not one, but two Michelin stars for their ground-breaking restaurant which opened in May 2019 in the stunning setting of Cliff at Lyons.

Aimsir is led by husband-and-wife team; Cornwall-born chef Jordan Bailey, former head chef at 3-star Michelin Maaemo in Oslo, and Danish general manager Majken Bech-Bailey. They moved to Ireland in early 2018 to explore the food producers and ingredients of their newly adopted home. Jordan was also a key member of 2-star Michelin Restaurant Sat Bains, while Majken honed her front of house skills at 2-star Michelin Henne Kirkeby Kro.

As much as possible, everything served in Aimsir is grown or produced on the island of Ireland. An all-island restaurant, the best producers and growers from all over Ireland have been invited to be part of this new celebration of the most powerful, significant and influential force in this country – the weather.'
